Chicken and Mushrooms with Oyster Sauce

1/2 tsp peanut oil
150g chicken fillet, sliced thinly
8 spring onions, chopped coarsley
2 cloves garlic, crushed
200g shitake mushrooms, sliced thickly
200g gai lan, chopped coarsely
150g oyster mushrooms, sliced thickly
1/4 cup (60ml) oyster sauce
2 tbs water
100g enoki mushrooms, trimmed
2 tbs finely chopped fresh flat-leaf parsley
Method:
1.  Heat oil in wok and sir-fry chicken until cooked.
2.  Add onion and garlic to wok and stir-fry until onion softens.  Add shitake musrooms and stir-fry until tender.  Add gai lan, oyster mushrooms, sauce and the water and stir-fry ntil vegetable are tender.
3.  Remove from heat and toss in enoki mushrooms and parsley.
Serve with Rice
