Pork Sang Choy Bow Recipe

1tsp sesame oil
1 small yellow capsicum (150g), thinly sliced
1 small brown onion (80g), thinly sliced
2 cloves garlic, crushed
2cm piece fresh ginger (10g), grated
250g pork fillet, minced
2 tbsp light soysauce
2 tbsp oyster sauce
1tbsp lime juice
3 cups (240g), bean sprouts
4 spring onions, thinly sliced
1/4 cup coarsely chopped fresh coriander
8 large butter lettuce leaves
Method:
1. Heat oil in wok and stir-fry capsicum, brown onion, garlic and ginger until onion softens.  Add pork and stir-fry until changed in color.
2.  Add sauces and juice and stir-fry until combined.  Remove from heat and toss sprouts, green onion and coriander into pork mixture.
3.Spoon sang choy bow mixture into lettuce leaves to serve
